Description

The Sfincia di San Giuseppe, or sfincia (from the Latin spongia, "sponge" or the arab "sfang" meaning a fried cake sweetened with honey), is a fried pastry, common in Western Sicily, and in particular eaten on March 19th, during the celebration of Saint Joseph (Father's Day in Italy).The typical recipe starts with a batter made from flour, water and eggs, fried in boiling oil and then covered with sugar; it is often filled with a ricotta cream and topped with orange peels and crushed pistachios.
